Autumn is a good\u00a0month to become complacent in the garden, with plentiful daily\u00a0harvests, and cooler autumn air allowing you to finally harvest a few veggies from your garden finally. If you time all your plantings right during the warmer seasons,\u00a0you\u2019ll\u00a0get a nice, steady autumn harvest for several weeks.\u00a0\u00a0<\/span><\/p>\n

Most leafy greens take\u00a0very little\u00a0time to mature and can <\/span>be eaten<\/span> at most any stage of their development. They can be\u00a0harvested\u00a0in any season and can still be worthwhile. Most greens are cool-season veggies, meaning autumn is the time to\u00a0harvest\u00a0them.\u00a0\u00a0<\/span><\/p>\n

Spinach<\/span><\/strong><\/h5>\n

One of the most common greens in most gardens.\u00a0<\/span>They can\u00a0be planted<\/span>\u00a0late in the summer for an early to\u00a0mid-autumn\u00a0harvest. Depending on the severity of autumn, they can also <\/span>be harvested<\/span>\u00a0later\u00a0in the season. Imagine picking fresh leafy\u00a0spinach\u00a0until the first hard frost.\u00a0<\/span><\/p>\n

Brassicas<\/span><\/strong>\u00a0<\/span><\/h5>\n

Autumn is the ideal time for brassica vegetables such as broccoli, cauliflower, and cabbage. These cold-hardy crops will\u00a0benefit\u00a0from being harvested this season as they prefer the cooler temperatures of autumn, resulting in sweeter and more tender harvests.\u00a0<\/span><\/p>\n

Carrots\u00a0<\/span><\/strong>\u00a0<\/span><\/h5>\n

Carrots are root plants perfect for autumn harvests. The\u00a0cool season\u00a0of autumn is what these plants\u00a0prefer, but\u00a0they can also <\/span>be harvested<\/span> in early winter.\u00a0On top of being\u00a0cool-season\u00a0harvests, some\u00a0carrot varieties\u00a0are also\u00a0best sown\u00a0in\u00a0autumn, expecting harvest in winter, but that all depends on the winter garden tasks you provide for them.\u00a0\u00a0<\/span><\/p>\n

Squash or pumpkin<\/span><\/strong>\u00a0<\/span><\/h5>\n

Squash and pumpkins are\u00a0perhaps the\u00a0image most people have in their minds when thinking of autumn vegetable harvesting. Autumn is the prime time for harvesting any squash or\u00a0pumpkins\u00a0you have grown.\u00a0<\/span><\/p>\n

Whether you\u00a0grow\u00a0them\u00a0vertically,\u00a0in\u00a0containers, or\u00a0in\u00a0your vegetable patch, you should look\u00a0forward to\u00a0harvesting\u00a0them.\u00a0<\/span><\/p>\n

Kale<\/span><\/strong>\u00a0<\/span><\/h5>\n

Similar to\u00a0spinach or lettuce, kale is a\u00a0fast-growing vegetable that needs to be\u00a0planted\u00a0in late summer and\u00a0harvested\u00a0by\u00a0autumn. Super-nutritious and\u00a0is a cut-and-come-again crop. It\u00a0doesn\u2019t\u00a0really matter what variety you grow. Harvest a few leaves from each kale plant, and\u00a0don\u2019t\u00a0take any from the top rosette, and you can get many pickings from your kale plants throughout autumn and winter.<\/span><\/p>\n
